Chef Don's Recipe of the Week



                               Mojo Sauce

                              1 C Olive Oil
                   4 Oz Garlic -- Finely Chopped
                          1 1/3 C Lime Juice
                        2 Tbsp Ground Cumin
                         1 Tsp Dried Oregano
                             1 1/3 Tbsp Salt
                    2 Tsp Ground Black Pepper
                    6 Tbl Fresh Cilantro Leaves
                               1 C Water


                               Directions:

 Heat the Olive oil in a deep saucepan over a medium heat.
  Add the garlic and cook until fragrant and a pale golden
                                  brown.
 Do not let the garlic brown too much or it will turn bitter.
    Stir in the lime juice, water, cumin, oregano, salt and
                                 pepper.
            Bring the sauce to a rolling boil, let cool.
                    Once cool, add the cilantro.

         NOTES : Suggestion: Serve with flank steak. 
 Rub mixture over a 5# piece of flank and let set overnight.
      Great for a summertime B.B.Q., accompanied with
                       carmalized maui onions!
